Shrimp & Grits!

So my guy and I were talking the other morning...or maybe we were watching the food network, I really don't remember at this point! Lol! But what I do remember is him telling me he had never had grits!


So being the foodie GF that I am I had to make him some! Here's my attempt...


for this fish there are 2 parts! The shrimp part and the grits part! So let's start with the grits...

I used quick grits... I took 2 TBSP of butter, 1&1/2 cup of chicken stock and 1 cup of milk and salt and pepper to taste. Then I warmed them up on the stove to almost a simmer. Then I slowly added 1 cup of the quick grits, stiring constantly. The quick grits set up fairly quickly... then I started on the shrimp!


I seasoned 1 lb of raw, peeled and deveined shrimp with Cajun seasoning. I added 2 TBSP of butter to a frying pan and 4 pieces of bacon chopped into bite size pieces. Cooked them to golden brown, then I added 1/2 of chopped onion, 3 cloves of garlic minced and the shrimp. Cooking until onions were translucent and the shrimp was pink! Finaa as lily I deglazed the pan with about 1/2 cup of chicken broth and more Cajun seasoning!


Back to the grits, I added about 1 cup of mixed cheese ( cheddar, Mozzarella and park) to the grits with more butter until creamy!


Now serve it up! Grits in the bottom of a bowl and the shrimp and Cajun onion gravy over the top!!



I topped mine with some fresh green onions as well!


This was delicious and sure was a hit! Now he can't say he has never had grits before! Lol!
