Vegetarian Spicy Asian Lettuce Wraps! #FoodieExtravaganza {Party}

Oh Yeah!! It’s #FoodieExtravaganza {Party} Time!! So this month’s party is being hosted by Wendy over at A day in the Life on the Farm and since February is both National Heart Healthy month and National Fiber Focus month she wanted to focus on Healthy eating and adding a little more fiber to our diets!!

So here I go! My first thought was Healthy…and what better way to be healthy than to create a vegetarian dish!! Right? And then to stay with the adding fiber to our diet…I added so yummy Brussels Sprouts to my dish! Win Win!

These Vegetarian Spicy Asian Lettuce Wraps are a great recipe that has you coming back for more…here is what I used;

  • 3 tablespoons hoisin sauce
  • 3 tablespoons reduced sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons oil
  • 1  package extra firm tofu 
  • 6-8 large fresh brussel sprouts, sliced thin
  • 8 ounces button mushrooms, sliced
  • 3 TBSP grated carrots
  • 1  can water chestnuts, drained and chopped
  • 1 TBSP minced garlic
  • 1 TBSP freshly grated ginger
  • 1/4 teaspoon red pepper flakes
  • 6 green onions, finely sliced
  • 8 butter lettuce leaves
  • additional grated carrots, green onions and red pepper flakes for topping

First I prepped all of my ingredients…I combined the soy sauce, hoisin sauce, sesame oil and vinegar then set it aside. Then chopped and slices all of my veggies. Finally I prepped the Tofu…OK so I have never ever used Tofu before so this was a first for me…apparently you need to remove as much of the moisture you can with paper towels…then crumble it up!! ( I learned this from Pinterest!!)

So I added the oil to a skillet and added the Tofu…and crumbled and browned it like you would any ground meat product!! I have to admit I was a little surprised that it popped and crackled so much…it was almost like popcorn…jumping out of the pan….

Once the Tofu was golden I added the vegetables and cooked them down a bit…

Once the veggies were tender crisp…I added the prepared sauce…and heated until just a little bubbly…that’s it…

Spoon a helping into your cleaned lettuce leaf…wrap it up and enjoy it like a taco!!

Those Asian flavors with that spicy kick of red peppers were amazing!! The texture was great too!! If you have never tried Tofu before (like me) this is the perfect recipe for a newbie!! And the addition of the Brussels sprouts and carrots gave it that extra fiber you need for a heart healthy recipe!!
