Strawberry Poke Cake!

Here is a little recipe that is probably as old as the hills! 🙂 But sometimes those are the best…tried and true. I remember my Mom making her own version of this Yummy cake when I was a kid…and let’s just say that was a long time ago!! 🙂

For my version I did change it up just a little bit but it is still just as good … if not better than the original.
Here is what I did:

I started by making your typical cake batter…I used a standard box variety…but instead of using water I used heavy whipping cream…to make the cake a littler thicker or dense. Then I baked according to package directions…

So while the cake was baking, I thawed out some frozen strawberries I had in the freezer…and then pureed them up in my little bullet like I would a smoothie. Then I made the Jello…but instead of using all water for that… I heated the strawberry mixture with a little water and then added the jello!! That way we had some real fruit for real goodness!!

Once the cake and the Jello are cooled…I used the handle of a wooded spoon to “POKE” holes in the cake…

Then I poured the Jello Mixture over the cake and put in the refrigerator for about and hour.

Then I frosted it with whipped topping and fresh strawberry slices!!

  1. I’ve been seeing poke cakes on Pinterest, but this looks like a great one to start with.
    I also use boxed cake mix on occasion, but also make substitutions (milk for water; extra egg; melted butter for oil)…the convenience is great.
    Going to go and pin this right now.
