Spicy Shrimp with Peanut Noodles! # FoodieExtravaganza {Party}

So it’s that time again…time for another post for the #FoodieExtravaganza {Party} !!! This months theme is Noodles and is hosted by Lauren from Gate to Plate

There are so many great ideas involving Noodles…you could go Homemade like a chicken and noodles dish…you could go Italian like a spaghetti or linguini…or choose Oriental like I did! Here is what I did…

Spicy Shrimp and Peanut Noodles (12)

For the noodles:
1 pkg of these Thai Brown Rice Noodles, prepared according to the package directions
2 cups chicken broth
2 tablespoons soy sauce
2 Tablespoons minced garlic
1 teaspoon minced fresh ginger
1/4 cup sliced green onion
1 tablespoon lime juice
1 teaspoon sesame oil
1/4 cup creamy peanut butter
1 tablespoon sweet chili sauce
1 tablespoon red curry paste
1 tablespoon cornstarch mixed with 2 tablespoons water

In a medium sauce pan combine all the ingredients. Whisk over medium heat until the mixture comes to a boil.  Reduce the heat to a simmer and cook, stirring occasionally, about 10 Minutes.

For the shrimp:
1 lb shrimp, peeled and deveined
2 tablespoons vegetable oil, divided
1 teaspoon minced fresh ginger
1/2 teaspoon red chili flakes
2 teaspoons minced garlic
1/2 cup coconut milk
1 tablespoon fresh lime juice
2 teaspoons sugar
1 teaspoon hoisin sauce
1 teaspoon red curry paste
2 teaspoons sweet chili sauce
1/4 cup fresh cilantro, chopped

Spicy Shrimp and Peanut Noodles (8)

Season the shrimp with a little salt and pepper, then do a quick sauté of the shrimp with half of the oil. Remove from pan once they barely start to turn pink.

In a medium sauce pan whisk together the remainder of the ingredients (except the cilantro) over medium heat…let simmer for about 5 minutes. Then add the shrimp and coat evenly cook another 1-2 minutes. Remove from the heat.

In a large bowl combine your prepared noodles and the peanut sauce until evenly coated. Toss with the fresh Cilantro. Plate the noodles and then top with the spicy shrimp!
