Roasted Cauliflower and Butternut Squash!

So with a new year well under way, I’ve have started to TRY to eat a little healthier…and the key word here is try!! I know when we are all so busy that gets a little challenging … especially for me…it is way more easier to pick something up then make a good meal…but as I said I’m trying!! 🙂

So this little side dish was really quite simple…the hardest part was peeling and cubing that darn butternut squash!! Hey but I did see in the produce section at Walmart they had butternut squash already peeled and cubed!! I’m sure it cost a little bit more…but if you are really pressed fro time…

Any way back to what I did….I cubed a butternut squash and chapped a head of cauliflower.

Then I drizzled them with olive oil and seasoned them up. I used some garlic powder, seasoning salt, pepper  and to add a little Smokey note I added smoked paprika!! (You can use whatever you like)

Then simple roast in the oven at 375 degrees for about 15 to 20 minutes until golden and tender…turning occasionally so they cook evenly…

These were so good!! My son actually wanted seconds!! Serve as a side with your favorite meat…I baked a chicken too!!
