Mexican Style Migas for Breakfast!!

So this recipe remind me of my Dad!! This was one of his favorite go to breakfast dishes…

My Dad has been gone now for almost 10 years. It’s amazing how quickly time passes…it seems like just yesterday we were dealing with his illness…and hoping and fighting for a different outcome…needless to say that is not how it turn out and he succumbed to his rare form of leukemia! I miss him…

My Dad and I were a lot alike…I look like him the most out of the three of us kids…and we ended up pursuing the same career path in “Quality Control” in the aircraft industry…but most of all we both have/had a passion for cooking! Creating great dishes that we shared with our friends and family!!

So this is one of those dishes…it fairly simple…super yummy…and can easily feed a crowd!!

So Migas is similar to a breakfast scramble…it can have just about any combinations of ingredients…it has a meat…eggs…maybe some vegetables…but the one thing that it has that sets it apart is Tortilla’s…but not like a burrito…the tortillas are diced into pieces and fried crispy before adding any of the other ingredients!!

Here’s what I used for this version…

  • 3 medium size flour tortillas (cut into pieces)
  • 4 eggs, beaten
  • 2 green onions sliced
  • 1 Jalapeno diced
  • 1/2 cup of sliced / diced steak
  • 1/4 cup of fresh cilantro, chopped
  • shredded cheese and more chopped cilantro for topping

So I wanted to reconfirm that recipe could be made with any meat (sausage, ham, bacon whatever you choose) as well as any veggies (be creative…peppers onions mushrooms etc.) And the larger the crowd the more eggs and tortillas you use!!

So since this was just my husband and myself this is what I used…

First step…crisp up your diced tortillas in a little oil ( 1 TBSP) in a frying pan…until golden brown…

Then I added my veggies and meat and warmed through…

Then added your beaten eggs to the mixture…Scramble it up like scramble eggs…

Then I added the chopped cilantro and stirred it all up…

Serve it up with a topping of shredded cheese…and more cilantro…warm up some extra tortillas too if you want…

This is a one dish wonder with everything you need for a hearty breakfast…enjoy!!
