Creamy Cajun Chicken Pasta!

I love a good spicy dish! Even when I’m making pasta. I look for ways to spice it up!

So there is a local restaurant in this little town that I live in that has a dish very similar to this that I love to order when we go out. It has just the right amount of spice and just the right amount of creamy pasta.

So I thought why don’t I try to make this myself…and of course save me some money. Plus as an added bonus I know what actually is going into the dish…

Here is what I did:

I started by seasoning about a pound of chicken strip tenderloins with cajun seasoning. (I bought these seasoning in the spice isle) Then in my cast iron skillet I browned them up until they were cooked through…

Meanwhile I started my pasta to boil…just cooked until still firm or “al dente”…it will continue cook in the pasta sauce…and I chopped up some fresh veggies…

I used some chopped fresh bell peppers, sliced red onion and some sliced button mushrooms…I added some sun dried tomatoes too!

When the chicken is done remove it from the pan…and start sauteing the veggies in about 2 tablespoons of butter…

Cook until tender…

Then I sprinkled about 2 Tablespoons of flour over the veggies…

Then I added 2 cups of heavy cream…(just because I know what’s going into it doesn’t mean it’s fat free…lol)

Then 1 cup of grated parmesan cheese too!! ( Cheese makes everything better) and about a half of a  teaspoon of the cajun seasoning. ( I used this instead of salt and pepper)

Then I added my cooked pasta into the pot and coated evenly…look at all the goodness!

Continue cooking and coating for a few minutes and then it’s ready to serve…

I served up the creamy pasta…then added the spicy cajun chicken tenderloins…topped that with a little parsley and a little more grated parmesan cheese!!

OMG!! This was amazing and quickly became a favorite!!  I hope you enjoy!!

  1. I do like the flexibility of this recipe—clearly one can use any fresh veggie you may have on hand.
    And doesn’t all of the vegetable goodness cancel out the heavy cream? 😉
