Mexican Food is one of my favorite food groups!! 🙂 I haven’t found a Dish I didn’t like. I remember as a kid my Mom would make Chili Relleno’s from scratch and they were to die for. The spice of the pepper and all the gooey cheese all fried up would not only make my mouth water it would tickle my taste buds with that very first bite…and every bite after.
Well I have never mastered the art of making this great dish…you have to stuff the pepper…then dip it in egg and fry it up! Well I always end up ripping the green chili and the cheese would fall out…or ooze out and I would be left with an empty chili and a burnt cheese mess in my pan…So this Chili Relleno Casserole has the best of the original version…just all mixed up together and in casserole form.
Here is what I did:
In a prepared 8 X 8 baking dish I layered diced green chili’s ( I used 3 large cans) and shredded jack cheese (about 3 cups)…alternating between the chili and cheese for several layer…
Ending the layers with the final cheese layer… I then whisked together 5 eggs and about 1/4 cup of milk…seasoned with salt and pepper…and poured this mixture over the chili and cheese.
I baked the casserole in a 275 degree oven until the cheese was golden brown and the eggs had set.
That’s it…another super simple dish that taste just like the original…you still have the slight spice of the chili and the gooey goodness of the cheese that makes chili rellenos so good…but in a simple casserole.
