So it’s that time again!! Time for another #FoodieExtravangza Party!! And this month is being hosted by the lovely Caroline over at Caroline’s Cooking!! The theme for this Month is Pancakes!! Yum!!
So it has been a busy summer for me…and I have been spending a lot of time at the lake…so thinking of what I wanted to do was kind of hard for me. I love pancakes!! Don’t get me wrong…but there were so many possibilities…but when I think of pancakes I immediately think of my granddaughter Addy!! Whenever she is with me that is what we have for breakfast!
So on a special camping trip with just Addy and Us (My hubby and I), I decided I would make them extra special version with a special topping!! I mean really who doesn’t like some sweet caramelized banana’s!
Here is what I did:
I started with a traditional pancake mix…and cooked them up in the traditional way…if you consider on a camp stove traditional! 🙂
Meanwhile I melted 1 stick of butter, and sliced up 2 full banana’s to saute in the butter…
Then I added about 3/4 cup of light brown sugar to the mix…
I stirred in the brown sugar and let those caramelize for several minutes…So once the pancakes were done and the banana’s were good and caramelized …it was time to assemble or top those golden pancakes!!
No need for syrup here…that caramel sauce and those sauteed bananas is all you need!! (please excuse the paper plate…after all we were camping)
These pancakes will soon be a family favorite!!
