Caramel Coconut Coffee Cake! #FoddieExtravaganza

Well it’s that time again…time for another edition of the #FoodieExtravanza {Party}  This Months Theme is Coffee Cake and our host is Caroline from Caroline’s Cooking!

You couldn’t have picked a better theme…I mean really…who doesn’t love a big slice of coffee cake!! So when I think of a coffee cake I think of young wives in the 1950’s or 60’s inviting their friend over for coffee and serving up a delicious slice of cake to go along with that…a kind of June Cleaver vision! 🙂

Well I decided I would make a Caramel Coconut Coffee Cake for this party…Here is what I did:

For the Batter

  • 2 cups of baking mix (like Biscuiq or Jiffy)
  • 3/4 cup of sugar
  • 2 eggs
  • 1/4 of oil
  • 1/2 cup of milk
  • 2 tsp.vanilla
  • 1/2 cup of vanilla Greek yogurt
  • 1/2 cup of sweeten coconut flakes
  • 1 cup of caramel bits

I combined all of the ingredients to make a batter…then folded in my caramel pieces…

Poured my batter into a prepared Bundt pan and baked at 350 degrees for about 30 -35 minutes. (or until the cake was firm and bounced back) The top side will not get real brown so don’t let that fool you…by using the baking mix this cake has a somewhat sweet bread texture…It’s done when it’s firm…

Then let cool and invert it into a plate…See all those ooey gooey caramel pieces baked in there?

For the sauce

  • 1 stick of butter
  • 1 cup of light brown sugar
  • 1/3 cup of heavy cream
Melt butter in a saucepan. Add brown sugar and heavy cream and whisk constantly over medium heat until sugar is dissolved. Bring to a boil and allow to boil for 3 minutes… Remove from heat and allow to cool slightly . You will need the sauce warm to pour over the cake..

Then I poured a warm caramel sauce over the top…

Meanwhile I toasted up some more sweeten coconut… just until golden and topped the caramel and the cake with the toasted coconut!

All you have to do now is slice it up and indulge!!

  1. Thanks for the post. It is really nice recipe, Caramel coconut Coffee Cake. It is one of the favorite for me. I am a big coffee lover. I love to eat anything, which is added with coffee flavor. i eat this with French press coffee. 🙂
