Biscuit Cinnamon Rolls with Chopped Pecans! #FoodieExtravaganza

Well it’s that time again!! Time for another #Foodie Extravaganza Party!! This month’s theme is Buttermilk Biscuits!! Oh Yum!! Our wonderful host this month is Kathleen from Fearlessly Creative Mammas…

I think biscuits are a staple in most homes…and the possibilities are endless…they can be the featured as the star…or as a compliment to any dish!! So what I chose to create is something I baked frequently on the weekends when my kids were younger…Biscuit Cinnamon Rolls!!

So I was never that type of Mom that made a lot of bread from scratch…in fact I have issues with yeast…lol!! I just can’t seem to get it to rise right. But who doesn’t like a fresh baked cinnamon roll? And with this recipe you don’t have to be in the kitchen for hours waiting for your dough to rise!!

Here’s what you need;

For the Dough

  • 2 cups of baking mix (like bisquick or jiffy)
  • 1/2 of block of cream cheese (soften)
  • 1/4 cup of sugar
  • 1/2 cup of milk

Combine all the ingredients together until it forms a soft dough…

Then roll it out on a floured surface…(if the dough is too sticky just add more baking mix)

For the Filling

  • 1/2 cup of butter or margarine
  • 1/2 cup of white granulated sugar
  • 1/2 cup of light brown sugar
  • 1/2 cup of chopped pecans (optional)
  • Ground Cinnamon to taste
  • 1/4 cup of corn syrup

Then slather your rolled out dough with the butter or margarine…

Sprinkle the white sugar and the cinnamon evenly over the top of the butter…

Next you will sprinkle the brown sugar and chopped pecans over that… (I love the addition of some nuts to give it a little more bite)

Roll that beauty up like you would any cinnamon roll…Can you tell I had a little difficulty this time…my roll is a little awkward shaped…but it doesn’t matter…the goodness is inside!!

Then slice them up into about 1 and 1/2 inch slices and place into a greased 8 x 8 baking dish. This recipe will make about 9 cinnamon rolls!! Just before you stick them in the oven…drizzle the corn syrup over the top of the rolls…this gives them an extra little bit of sweetness!

Bake at 425 until the are golden brown…let cool slightly…

Then top with a light coat of cream cheese glaze…

For the Glaze

  • 2 cups of powdered sugar
  • 1/2 block of cream cheese (the other half)
  • 1 tsp. vanilla
  • 2-3 TBSP. of milk (depending on how thick you want it)

These little beauties have all the flavor of a traditional Cinnamon Roll…without all of the extra time involved!!

  1. Oh my gosh! You are a genius! I too have issues with yeast. I have a friend who brought me a recipe called No Fail Bread. When I made it, it was flat as could be. These cinnamon rolls are so smart. I will be making them for sure.
